I love to cook, but leftovers can be the bane of my existence. Anytime I can find a way to use leftovers in a way that is completely different from their original meal, I am excited.

It doesn’t always happen, but when it does mmmm, mmmm, mmm!

A couple of weeks ago, there was a BOGO deal on pork tenderloin and it is always a bonus when you pay for one and get two!

On Friday I pulled out a package of the tenderloin and lightly floured them and browned them in my new pot. When they were browned, I covered them and then put them in a preheated oven (at 350° F) with a diced up onion, some purple potatoes from our garden, a half a cup of red wine, and a splash of water. While they cooked, I peeled a couple of apples and sauteed them with some butter, lemon, and a bit of cinnamon.

About 45 minutes later, I had a lovely dinner of pork tenderloin, potatoes, and escalloped apples. It was good!

Now, enter the leftover portion of this post. I had one whole pork tenderloin left.

So…on Saturday night we planned on having ½ of the pork tenderloin in a Flat Bread sort of pizza.

Here is my ingredient list, and you will note, I only had to buy two items (the flat-bread and the jalapeno) to make the meal work:

Barbecued Pork Flat-bread

  • 1 Trader Joe’s Flat-bread
  • 2/3 c. Heinz Chili Sauce ®
  • 3 Tbsp. brown sugar
  • ½ tsp. dry mustard
  • ½ pork tenderloin – cooked and shredded
  • 1 red onion, sliced (I used the onions that were originally cooked with the pork)
  • 1 c. shredded cheese (I used what I had open in my fridge, sharp cheddar, mozzarella, and a bit of co-jack)
  • 1 jalapeno, sliced thinly

Pre-heat oven to 425° F (or whatever the package instructions recommend)

Prepare the flat-bread according to the package directions. I lightly brushed both sides with olive oil and placed on a baking sheet.

Combine the Chili sauce, brown sugar, and dried mustard. Spread mixture over the top of the flat-bread.

Cover with shredded pork and onions. Top with shredded cheese and put in the oven and bake 10-15 minutes (again, you will want to follow your flatbread package instructions).

Remove from the oven when the cheese is melted, the sauce is bubbling a bit, and the crust is browned. Let sit a few minutes before cutting. Top with thinly sliced jalapeno and enjoy!

Super easy and it was so good, and quite unlike our original meal from Friday. I still have ½ a pork tenderloin left and I think that just might become carnitas one night this week!
